Guiding Principles

Our family and family values are at the center of all decisions.

As someone living with significant food allergies, it is important that we provide a menu that is accessible to a wide range of dietary needs and lifestyles.  The kitchen and menu is designed to have separate broths and frying oils for veggie only, chicken only, seafood only, and beef/pork only.

As a group, we are conscientious of our precious natural resources so we make business decisions that contribute to a regenerative and/or sustainable ecosystem.  This means seeking local sourcing of foods, setting up recycling systems, and purchasing equipment with consideration to our environmental footprint.

Our family is a very diverse group therefore our business model will reflect that diversity through economic empowerment of local businesses, Filipino artisans, and people who live with disability. You will experience inclusion in the art and handicrafts that we decorate with and also sell; in the staff that we hire and the physical design of our space; in the way we engage with our community.

Lastly, the Philippines is an archipelago consisting of over 7,000 islands, divided into 17 regions, and over 120 different languages. This naturally contributes to adoption and adaptation of foods not just from thousands of years of trade and conquest but also through the merging with our own indigenous foods and cooking techniques. We intend to contribute to the Filipino Food Movement by representing this cuisine to the best of our ability!
